This recipe will need to be made in batches, each batch won’t take too long.
This is perfect when you are short of time.
Ingredients
4 x 6 Eggs (beaten)
1Ib Mushrooms (roughly chopped)
8oz Baby spinach
4 x 1oz Unsalted butter
4oz Parmesan (grated)

Instructions
- The number of eggs needed is based on how big your frying pans are.
- Heat your non-stick frying pan, once warm add butter then stir in the mushrooms.
- Once the mushrooms cooked add the spinach.
- Allow the spinach to wilt down a little.
- Add the beaten eggs and slowly mix the eggs mushrooms and spinach together.
- Top with the cheese and place into a hot oven 360°F.
- Cook for 5-6 minutes or until eggs have set. Serve.
Notes
The technique of making a frittata (baked omelette) is a great skill, it enables you to make tasty healthy food quickly. The filling can be changed to fit what you have in stock.
Note of warning, remember to cover the frying pan handle once the pan comes out the oven.
