Cauliflower cheese is a dish we all recognize, most of the guests at Maclean House will have had it loads as kids and will hopefully stimulate memories of home.

Creme Brulee


4 cups                 Long grain rice to

6 cups                 Parts stock

1                           Onion finely diced

1                           Bay leaf



  1. Heat pan with a lid add butter then add onion and sweat for 4-5 minutes without color.
  2. Add rice and toast for 1 minute coating rice in the butter. Now add stock bring to the boil place on a paper cartouche take off heat put lid on.
  3. Place in a pre heated oven 360°F for 18 minutes. Allow rice to stand once out and fluff up with a fork.


The cheese sauce can be made in advance.  It cam also be used for lots of different dishes.
